A sandwich is the most convenient but you can also do a wrap with greens, lunch meat & cheese. Cheese stick is a good go-to snack as well as go-gurt (yogurt in a stick), you can freeze the yogurt so by lunch time it’s thawed out & remains cold. Juice box or water bottle and perhaps a fruit salad. A small bag of healthy baked chips or squeezable fruit & veggie pouches are a good no-fridge ideas. You could also do hummus dip with veggies or crackers.
