Help! I need easy, nutritious meal ideas from experienced parents!

Hi all!! I’m struggling thinking of ideas for meals for my 17month old! Mostly just breakfast and lunch since I’m at work during those meals. My son does not like processed carbs lol (maybe he was switched at birth LOL) so it’s difficult to think of easy meals to pack for his breakfast and lunch. He loves fruit which helps but I feel like I should change up the daily egg scramble he loves for breakfast and grilled nuggets for lunch. I’ve tried offering toast, pb&j sandwiches, pancakes, bagels, grilled cheese sandwiches, quesadillas and other quick and yummy breakfasts and lunches but he won’t eat any of it as soon as he tastes the bread, tortilla, etc. Any ideas? It would be best if it’s something I can pack that can be easily reheated by his caretaker. Thank you in advance!!! Side note: There are no allergies or sensitivities or restrictions so anything goes! Feel free to suggest it all!

    Does he like pasta? My kids love veggie pasta with butter and dash of salt. Also if he likes egged you can bake a egg muffin with veggies in the oven.

    Hi Bhavana! Thank you for the suggestion! He’s iffy with pasta. He doesn’t eat Mac n cheese but I will try the veggie pasta with butter! I love the idea of the egg muffins but on the weekend as I don’t think they will be tasty if reheated during the week.

    Actually I make the egg muffin on Sunday and they stay fresh in the fridge for 3 to 4 days. The kids take it to school once a week

    I ask the day care warm the egg for 1.5 min microwave

    Yes the veggie pasta is great. My sister in law one time made it with Italian salad dressing on it with cubed pieces of cheese and olives. Even I really enjoyed it!

    Meatballs, cheese cubes, fruit and veg, hummus. Does he eat rice? Try Fried rice.
